A Memorial Day BBQ Favorite: Three Bean Salad

A great make-ahead side dish that's both inexpensive and easy to prepare.

Three Bean Salad is always a party favorite.  With its light, fresh, and cool flavors, everyone always helps themselves to seconds.

It's a great dish for any BBQ because it takes minutes to prepare and must be made a day ahead, providing a convenient party dish you don't have to fret over.

I've tried making it with both fresh beans and canned and have found canned beans hold the flavors far better than freshly cooked beans, but you can use whichever you prefer.

Three Bean Salad
Serves: 6
Prep Time: 5 minutes
Cook Time: 5 minutes

Ingredients

2, 14.5 oz cans of cut green beans
1, 14.5 oz can of cut wax beans
1, 19 oz can of dark red kidney beans
1/4 cup minced red onion
1/4 cup sugar
1/3 cup cider vinegar
1/4 cup vegetable oil
1/2 teaspoon salt
1/4 cup minced parsley
salt and fresh ground pepper to taste

Directions
Drain and rinse your beans.  Mince your red onion and combine your beans and onion in a mixing bowl. Combine your sugar, cider vinegar, vegetable oil and salt in a small sauce pan and bring to a simmer over medium heat, stirring until your sugar dissolves. Once simmering, pour your liquid over your bean mixture and toss to coat.

Refrigerate overnight to allow the flavors to marinate properly. Then season with salt and pepper to taste and add your fresh chopped parsley.
