Chewy Oatmeal Raisin Cookies Drizzled With A Sugar Glaze

A snack your kids will enjoy making in the kitchen with you!

Finding the perfect cookie is a difficult task. A cookie can be baked with so many different consistencies. Some prefer it crispy and flaky, thick and chewy, or a soft center with a crisp exterior.

Personally, I love a thick and chewy oatmeal raisin cookie and have been on the look out for a great recipe. This recipe provides the perfect chewy bite.

Not only is the consistency perfect, but it's extremely quick and easy to make, providing you with a family friendly recipe your kids will enjoy making alongside you in the kitchen.

It also requires mostly pantry staple ingredients, which means you can whip a batch of these cookies up whenever the mood strikes.

Whether you're looking for a quick dessert or a snack to put in your children's lunch box as the first day of school approaches, this recipe will not disappoint. Hope you enjoy it!

Chewy Oatmeal Raisin Cookies with a Drizzled Glaze Topping

Adapted from Smitten Kitchen
Makes: 24 cookies
Prep Time: 15 minutes plus refrigerate overnight
Cook Time: 10-12 minutes per cookie sheet

Ingredients

1/2 cup (1 stick) butter, softened
2/3 cup light brown sugar, packed
1 egg
1/2 teaspoon vanilla extract
3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups rolled oats
3/4 cup raisins
1/2 cup walnuts, chopped (optional)

Sugar Glaze:
1 cup confectioners sugar
1 1/2 tablespoons water

Directions

In the bowl of an electric mixer, combine your butter, sugar, egg, and vanilla extract.  Mix on high with a paddle attachment until smooth, about 30 seconds. Meanwhile, combine your flour, baking soda, cinnamon, and salt in a mixing bowl. Mix until combined.

Add your dry ingredients to your butter/sugar mixture. Mix on low/medium speed until the ingredients are just mixed. Then add your raisins, oats, and walnuts and mix by hand until combined. Chill your dough in the refrigerator overnight for best results or bake immediately, but they may not be as thick.

Preheat your oven to 350 degrees. Spoon your dough onto a greased cookie sheet and bake for 10-12 minutes.  Transfer to a cooling rack until cooled.

Prepare your glaze by mixing your glaze ingredients in a small bowl.  Add more sugar to thicken or water to dilute the consistency. Once your cookies are completely cooled, drizzle the glaze over the top and set the cookies aside to let the glaze harden.
