Cucumber and Radish Salad: A Refreshing End of Summer Delight

A great way to use up your garden fresh cucumbers!

This time of year people are trying to find ways to use the cucumbers that are growing rapidly in their gardens. This cool and refreshing salad is an easy recipe to try.

It's a family recipe that my mom grew up enjoying and was passed down to me and my family. Traditionally, we serve our cucumbers with only sour cream and salt, but there are many variations to this traditional salad.

Coincidentally one of my favorite food blogs, Simply Scratch, posted her family recipe for the same salad with a bit of a variation. I enjoyed her addition of new ingredients, which added a touch of flavor.

No matter how you prepare this classic dish, it's a simple and refreshing way to prepare your abundance of cucumbers.  Hope you enjoy it!

Cucumber Radish Salad Tossed In A Sour Cream Dill Dressing
Adapted From Simply Scratch
Serves: 6
Prep Time: 10 minutes

Ingredients
2 large cucumbers
1 cup sliced radishes
1/2 cup sour cream (can be substituted with plain yogurt)
2 tablespoons dill
1 1/2 teaspoons salt
1 teaspoon sugar
1 teaspoon cider vinegar

Directions
Wash and peel your cucumber, peeling only in 1/2 inch increments.  Thinly slice your cucumbers and radishes, add to a large mixing bowl, and set aside.

Meanwhile, in a medium mixing bowl, combine your sour cream, salt, sugar, cider vinegar, and chopped dill. Whisk until combined and smooth.

Add your sour cream dill dressing to the large mixing bowl and toss until the vegetables are coated and serve immediately.
