Curried Chicken Salad Sandwich

A flavorful spin on the classic chicken salad.

Finding new ways to cook chicken can be a challenge. While chicken is a universal protein that can be served many different ways, expanding your uses outside of what you are accustomed to can often be difficult.

This chicken salad is a great way to add variation to a classic dish. 

Chicken salad is a sandwich staple, usually made with mayonnaise, chopped celery, topped with fresh greens. It is easy to prepare and a great way to use up leftover chicken.

While the traditional chicken salad is good, curried chicken salad is a stepped up version. Mixed with a great variety of ingredients, providing your pallet with an explosion of flavor in every bite.

Curried Chicken Salad Sandwich
Adapted from Gourmet, 2002 featured on Epicurious
Serves: 6
Prep Time: 15 minutes
Cook Time: 20 minutes

Ingredients
2 chicken breasts
1/2 cup mayonnaise
1/3 cup plain yogurt
5 teaspoons curry powder
1 tablespoon fresh lime juice
1 teaspoon honey
1/2 teaspoon fresh ginger, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup celery, diced
1 cup red grapes, cut into 1/2 inch slices
1/2 cup dried apricots, chopped
1 cup cashews, chopped
1/4 cup scallions, thinly sliced
2 tablespoons parsley, chopped
your choice of bread
lettuce mix
red onion slices (optional)

Directions
Place your chicken in a pot, fill with enough water to cover the chicken and bring to a simmer. Once simmering, cook your chicken for 6 minutes. Remove your pan from the stove and cover. Let your chicken sit until cooked through, about 15 minutes. Remove your chicken from the water and let sit for 10 minutes until cool. Then chop into 1/2 inch bite-sized pieces and set aside.

Meanwhile, chop your celery, grapes, dried apricots, cashews, scallions, and parsley.  Juice your lime and grate your fresh ginger. In a medium mixing bowl, combine your mayonnaise, plain yogurt, curry powder, lime juice, honey, fresh ground ginger, salt, and pepper. Mix until combined. 

In a large mixing bowl, combine your chicken, celery, grapes, apricots, cashews, scallions, and parsley. Add your curry dressing and mix until combined. Add your dressing gradually until you've reached your desired consistency.

Create your sandwich by spooning a large spoonful of chicken salad on a slice of bread. Top with slices of red onion and lettuce. Top with your last slice of bread and serve!
