Peanut Butter Pretzel Bites: A Great Afternoon Snack For Kids

So easy to make, even your kids will enjoy helping you!

These Peanut Butter Pretzel Bites are a great recipe to make with kids. They're extremely easy, requiring mostly assembling of ingredients, providing a perfect kid-friendly recipe.

These bites are a perfect after-school snack, treat to sneak into lunch boxes, or a poolside sweet to munch on. They are an item you can make ahead and freeze in a freezer bag for any occasion.

It's inexpensive and requires ingredients you most likely have on hand, allowing you to make them any time you want.

Not only are they fun and convenient, but they're absolutely delicious. Peanut butter, pretzels, and chocolate are a perfect combination. It reminds me of a Take5 candy bar in miniature bite-sized form.

Peanut Butter Pretzel Bites

Makes: about 50 pretzel bites
Prep Time: 20 minutes, plus freezing periods

Ingredients

1 cup creamy peanut butter
2 tablespoons softened butter
1/2 cup powdered sugar
3/4 cup brown sugar
pretzels
1  1/2 cups semi-sweet chocolate chips

Directions
Combine your peanut butter, softened butter, powdered sugar, and brown sugar in the bowl of an electric mixer. Using the paddle attachment, mix on medium speed until your ingredients are combined. Once mixed, test the consistency of your peanut butter mixture by placing a small amount in your hand. If it's too sticky to handle, add up to 1/4 cup extra powdered sugar until your mixture is easier to roll.

Spoon 1 teaspoon of batter and roll/shape it into a ball. Sandwich it between two pretzels. Continue these steps until you've used all of the peanut butter mixture and transfer your peanut butter bites to a cookie sheet lined with waxed or parchment paper. Freeze for 30 minutes.

Melt your chocolate chips in a microwave safe bowl for 30 second intervals, stirring in between each until your chocolate is melted. Immediately dip half of your peanut butter bites into the chocolate and return to the lined baking sheet. Continue these steps with all of your pretzels then return to the freezer until your chocolate hardens. Serve and enjoy!
